Beef Quesadilla

Adapted from Real Simple’s March 2011 issue


1lb ground beef

1 red onion, half chopped and half sliced

4 flour tortillas

Canola oil

1c frozen corn, thawed

Baby arugula for a salad

Juice of 1 lime

1/4 tsp cayenne pepper

1/2-1 1/2 cup Mexican blend cheese

Kosher salt

Black Pepper


Saute the chopped onions in 1 tbsp of canola oil until they start to soften (about 3 minutes). Add the ground beef, cayenne pepper, 1/2 tsp kosher salt, 1/4 tsp black pepper, and saute while breaking it up until the beef is cooked through.

Brush one side of 2 tortillas with about a tsp of canola oil (just until it’s lightly coated) and put this side down on a foil lined baking sheet. Preheat the broiler. Top with the ground beef mixture, as much cheese as you’d like (and I added some raw sliced red onion) and then with the other tortilla (also with the outer side brushed with canola oil). Broil the quesadillas until the cheese melts and the tortilla starts to brown, about 1-2 minutes per side.

Mix the lime juice with 1 tbsp of canola oil. Top the arugula with corn and sliced red onions and drizzle the dressing over it.
