Bibimbap

Modified from several recipes

Carrot Salad

  • 4 carrots, peeled and cut into 2-inch matchstick strips
  • 1/2 teaspoon salt
  • 1 tablespoon toasted sesame oil

Heat the sesame oil in a medium skillet, add the carrots and salt and stir fry them for 2 minutes.

Spicy Cucumber Salad

  • 1/2 cucumber chopped into 1/4 inch cubes
  • 1 tsp salt
  • 2 tbsp Tangy Red Pepper Dressing

Toss the chopped cucumber with the salt in a large bowl and let rest for 5 minutes . Gently squeeze the liquid from the cucumbers and transfer to a serving bowl. Add the Tangy Red Pepper Dressing to the cucumbers and toss to combine.

Seasoned Spinach Salad

  • 8oz frozen chopped spinach
  • 2 tbsp toasted sesame oil
  • 1/2 tsp salt

Thaw the chopped spinach, squeeze the excess water out of the leaves. Transfer the spinach to a bowl, add the sesame oil, and salt and mix well.

Seasoned Beef

  • 1lb ground beef
  • 1/3c  soy sauce
  • 1 1/2 tbsp sesame oil
  • 2 1/2 tbsp brown sugar

Mix the beef, soy sauce, sesame oil and brown sugar and let marinate for 15 minutes. Stir fry the beef in a medium skillet until cooked through

  • 3 c cooked brown rice
  • 2 tbsp toasted sesame oil
  • 2 fried eggs, sunny-side up
  • Remaining Tangy Red Pepper Dressing

Tangy Red Pepper Dressing

  • 2 tbsp Korean red pepper paste
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tbsp water
  • 2 tsp toasted sesame oil

Combine all ingredients

To Assemble

Place a heavy bottomed pot over medium heat and add 2 tbsp of toasted sesame oil. Heat the oil for 1 minute and add the rice in an even layer to the bottom of the pot. Cook the rice for about 5 minutes, it gets crispy. Spread the beef out in the middle of the rice and arrange the salads around the edge, continuing to heat. Add the fried eggs to the top, take a picture to prove it looked nice, and then mix it allll together with some sriracha to taste. Garnish with scallions, shredded lettuce, cilantro, or anything else you like.
