Black Bean Burgers

Ingredients

1 15 oz can black beans, rinsed and drained well

1 egg

1/4 c bread crumbs

1/4 medium yellow onion

1 clove garlic, finely chopped

2 tbsp cilantro leaves

1/4 tsp red pepper flakes

Directions

Pulse the onion and garlic in a food processor until finely chopped. Add 1/2 can of the black beans, the egg, the cilantro and the red pepper flakes and blend well. Transfer to a bowl and mix the other 1/2 can of beans and the bread crumbs in well. Season with salt and pepper. Form into 2 patties, separated with saran wrap, and freeze until ready to use (I found refrigeration doesn’t set the patties well enough that they won’t fall apart). Cook on a grill or pan, 5-6 minutes per side, and slice a ripe avocado on for garnish.
