Cheddar French Toast with Sizzled Tomatoes

1 large egg

3/4 c heavy cream

1/2 tsp kosher salt

3/4 cup shredded cheddar cheese

4 thick slices of bread

2 tbsp unsalted butter

2 thickly sliced tomatoes

1/4 tsp black pepper

1 tbsp olive oil


Combine the eggs, cream and 1/4 tsp salt with a fork in an 8X8 baking dish. Add the cheese. Soak 2 of the bread slices in the batter for 1 minute, turn over for another minute. Melt 1 tbsp of butter in a nonstick skillet over medium heat. Let the excess batter drip off of the bread and transfer it to the skillet. Put some of the cheese from the batter onto the bread, cook 3-4 minutes/side. Wipe out the pan and repeat with the remaining tbsp butter and the rest of the bread. Season the tomatoes with salt and pepper, wipe out the skillet. Heat the olive oil over medium heat and cook the tomatoes 2 minutes per side and serve with the french toast.
