1/2 pint grape tomatoes, quartered
1 cucumber, peeled, cut in half lengthwise and seeded and chopped
5 radishes, chopped
4 scallions, finely sliced
2 tbsp finely chopped fresh mint leaves
1 garlic clove
1/2 tsp salt
3 tbsp fresh lemon juice
1/4 tsp freshly ground black pepper
3 tbsp olive oil
Combine the first 5 ingredients in a bowl.
Mince the garlic and then mash it into a paste with the salt. Whisk the garlic paste with the lemon juice and pepper in a bowl. Add the olive oil slowly, whisking it to blend, and add it to the vegetables and toss.
Serve over falafel.
