Cranberry Walnut Chicken Salad

“adapted” from Smitten Kitchen


1 lb boneless skinless chicken breast, poached until cooked and then cubed

1/3 cup mayonnaise

1 1/2 tbsp white wine vinegar

1/2 cup dried cranberries

2 celery hearts, diced (substitute one of these for half a Granny Smith for some tartness)

2 shallots, finely chopped

1/2 cup chopped, toasted walnuts




Mix everything together and serve on delicious bread.
