French Chicken with Vinegar Sauce


2 1/2 cups coarsely chopped onion

8 chicken thighs (with skin and bone)

1/2 cup dry white wine

1/2 cup fat free chicken broth

3 tbsp tomato paste

2 tbsp balsamic vinegar

1 tsp minced fresh tarragon

1/2 tsp brown sugar

1/2 tsp salt

1/4 tsp red pepper


Coat a nonstick skillet with cooking spray, place over medium high heat until hot. Add onion, cook 5 minutes or until lightly browned. Add chicken; sauté each side for 3 minutes or until browned. Combine wine and next 8 ingredients (through pepper) in a medium bowl, stir well. Add the wine mix to the chicken and cover, reduce heat, and simmer for 20 minutes.

Serve with polenta.
