2 tbsp olive oil
1 leek, sliced thin
1 clove minced garlic
1/2 c grated sharp white cheddar
3 tbsp grated parmesan
1 tbsp fresh thyme, chopped
Preheat oven to 400 degrees. Heat olive oil in a 10 inch skillet over medium heat. Sauté leeks until tender, about 2 minutes. Add garlic and cook for another minute.
Meanwhile, beat the eggs in a medium bowl, then mix in the cheeses and chopped thyme. Season with salt and pepper.
Making sure the leeks are evenly distributed in the pan, add the egg mixture (don’t mix). Cook for 1 minute, just until the eggs set around the edges. Put the pan in the oven and bake for 12 minutes. Use an oven mitt, remove, and then slide onto a plate.
