Gourmet Taco Salad

Barely adapted from Gourmet

Ingredients

Salad

1.5 tbsp olive oil

1 finely chopped onion

1 clove garlic, minced

2 tsp ground cumin

2 tsp chili powder

1lb ground beef

2 tbsp tomato paste

3/4 tsp salt

1/4 tsp pepper

1 large head of romaine, washed and sliced crosswise

2 tomatoes

Coarsely grated sharp cheddar

Tortilla chips

Vinaigrette

1 clove garlic, chopped

3 tbsp red wine vinegar

3 tbsp fresh lemon juice

1/2 tsp ground cumin

1/2 tsp salt

1/8 tsp black pepper

1/2 c plus 2 tbsp olive oil

1 c chopped, seeded tomatoes

1 large jalapeno, seeded and chopped

1/2 c loosely packed cilantro leaves

Directions

Salad

Heat 1.5 tbsp olive oil over low heat, add onion, garlic, cumin and chili powder and cook until the onion is softened (stirring). Add the beef and cook over medium heat, breaking lumps, until cooked through. Add tomato paste, salt and pepper, and cook for 4 minutes. Transfer to a bowl to cool.

Place the lettuce in a shallow bowl and arrange the tomatoes on top.

Vinaigrette

Blend the garlic, vinegar, lemon juice, cumin, salt and pepper in a blender (or the teeny food processor attachment on a stick blender) until smooth. Add the oil slowly and blend. Add tomatoes, jalapeno and cilantro and blend until smooth.

 

Take the lettuce/tomato mixture onto individual plates and top with a serving of beef, crumbled tortilla chips, cheddar cheese, and dressing.
