Martin’s Steel Cut Oats

Adapted from Martin who adapted it from David Kahn on Chowhound

Toast 1/2 cup of steel cut oats in about 1 tbsp of olive oil just until they start to brown and smell really good. Add to the oats, 2 cups of hot water and about 1 inch of vanilla bean split down the middle, bring the whole thing to a rolling boil, cover, and turn it off right away. The recipe says “go to sleep” but you don’t have to. You can stay up for a little bit.

It looks really soupy and wrong at this point but in the morning…it looks like this. The oats absorb all of the water.

Add 1 cup of milk, a little salt and cinnamon and some vanilla extract (all to taste) and cook as low as possible, uncovered, until it thickens.

Fill it with stuff you love and enjoy!
