Mom’s Salmon Patties


8 saltines

One small onion

One egg

One can salmon 14 to 15 oz.

Cornmeal and vegetable oil


Place saltines in food processor with small peeled onion.

Pulse until finely chopped

Add one egg and salmon (skinned and de-boned from a 15 oz can) to processor and pulse briefly, it should not be mushy, some chunks of fish will remain

Form into about 6 patties, roll in cornmeal and fry in oil until crispy and brown on the outside.
