3 eggs + 1 yolk
1 2/3 cups milk
A whole bunch of spinach
Handful of grape tomatoes, quartered
1/3-1/2 cup shredded cheddar
Pre-made 9 ” pie crust
Preheat the oven to 400 degrees.
Wilt a bunch of spinach in less than a tbsp of olive oil and then, once cool, squeeze the excess water out.
Layer the cheese on the prepared crust. Then layer the spinach and tomatoes on top.
Beat the eggs and milk together and season with salt. Gently pour over the vegetables and cheese in the crust without dislodging the vegetables like I did (still tastes good)!
Line a baking sheet with foil and place the pie crust on top, bake covered with foil for 30 minutes and then uncovered for 20-30 or until the middle it set and browned.
Shovel it in your mouth.
