Shrimp Tacos

Adapted from Rachael Ray

Ingredients

1/2 lb shrimp (peeled, tails removed)

1 jalapeño, chopped and seeded

2 cloves of garlic, chopped

Zest and juice of 1 lime

1 tbsp olive oil

2 scallions, thinly sliced

2 tbsp chopped cilantro

1 half head of iceberg lettuce (cut this in half and peel layers off)

Shredded cheese

Directions

Heat the olive oil over medium heat, add the jalapeno, garlic, then shrimp and cook until the shrimp is cooked through.

Season with lime juice, zest, salt and pepper. Serve with cilantro, cheese and scallions wrapped in lettuce leaves.
