Thai Lettuce Wraps


1 lb ground sirloin

1 cup leeks, thinly sliced

1 tsp minced garlic

1 cup tomato sauce

1 tsp red curry paste

1/2 cup coconut milk (light or regular)

1 tbsp Asian fish sauce

1 tbsp brown sugar

1/4 tsp lime zest

1 1/2 tbsp fresh lime juice

Head of iceberg lettuce

Chopped cilantro for garnish


Spray a saute pan with cooking spray and saute the leeks for 5 minutes. Add the garlic and saute another minute. Add the sirloin and cook until lightly browned, about 7 minutes.

Add the tomato sauce and the red curry paste and simmer until about 1/2 the liquid is evaporated. Add the coconut milk and the next 4 ingredients and cook until slightly thickened, about 2 minutes.

Core and quarter the head of lettuce and serve the wedges with the meat. Serve with basmati or jasmine rice and garnish with cilantro.
