Zucchini Pizza

Adapted from eatliverun


2 zucchinis, grated with a box grater or in your food processor

2 cloves of garlic, pressed or minced

1 cup of ricotta

2 cups shredded mozzarella (I used gruyere and it was delicious)

Kosher salt


Red pepper flakes

Pizza dough (store bought or homemade)


So pretty!

Ricotta with garlic, salt and pepper. Aka, heaven.


Preheat your oven to 500 and dust a pizza stone or baking sheet with a  healthy dose of cornmeal.

Press the grated zucchini with paper towels to remove the excess water and add the mozzarella to the zucchini in a bowl and mix. Season the mixture with salt and pepper.

Combine the ricotta and garlic and salt and pepper in a small bowl.

Shape the pizza dough and place on your baking sheet or stone. Spread the ricotta over the dough, top it with the zucchini mixture and then red pepper flakes if you’d like. Turn the oven down to  450 and bake for 12-15 minutes until the crust browns. (please ignore my pale, weak crust. I will update the pictures when I make it again)


Oh yum. Zucchini is fun again.
