Adventures in Seafood

Maybe it was the beach day, maybe it’s the warm weather and the short cooking time that seafood requires, but I’m “hooked”. Sorry for that. It was right there!

This salmon only need a dab of olive oil, a squeeze of lemon juice, and a sprinkling of kosher salt and pepper, that’s how good. 20 minutes at 400 and it was ready for transport into the bedroom for consumption in the air conditioning. Besides a light salad,

a baked sweet potato loaded with butter was the perfect starch. Boy do I need to start TRAINING!

Then tonight, courtesy of this month’s Real Simple…

grilled shrimp panzanella! Great use for day old baguette and pretty much anything with tomato and basil in it is rocking my socks right now.

Speaking of training, this week is the beginning of 12 weeks of half marathon training, again. But I swear to you, if it doesn’t cool off, I WILL run on the TREADMILL! I hate to do it, I really do, but 90s and humid? You can’t be serious. I’m not one of those people who will swear to you that I love every minute of this and that it’s always wonderful and easy, especially at the beginning. I haven’t shaken this cold after what’s quickly approaching 3 weeks and this starting from scratch thing…I hate it. I’m aiming for a jog tomorrow morning followed by the world’s best yoga class tomorrow night. Yippee!!!

And on a book note, The Glass Castle by Jeanette Walls was a fantastic book, thanks Linda! And so far, Jonathan Safran Foer’s Extremely Loud and Incredibly Close is so touching and wonderful, I’m really lucking out that people around me recommend great reads! Thank you to Jacquie for that one!
