2 1/2 c all purpose flour
2 tsp baking soda
1/2 tsp salt
1/2 c crystallized ginger, finely chopped
2 sticks unsalted butter, softened
1 c packed light brown sugar
2 large eggs
1/2 c mild honey
Preheat oven to 350 and set racks on the upper and lower third of the oven.
Whisk together flour, baking soda, salt and ginger in a bowl.
Cream butter and sugar until pale and fluffy. Beat in the eggs and honey until combined (medium speed). Reduce speed to low and mix in the flour.
Drop heaping tbsp of the dough 2 inches apart on ungreased cookie sheets. Bake the cookies in batches, switching the rack position halfway through, for 10-14 minutes or until golden. Cool cookies on racks.
