Ingredients
9oz (3 sausages) italian chicken sausage, casings removed
15 oz fresh marinara sauce
3/4 cup grated fresh mozzarella
1/4 cup grated parmesan
About 4 tbsp fresh basil leaves, chopped
1 baguette, cut into 3, 5 inch segments and sliced in half
Directions
Preheat oven to 400.
Mix together the sausage, marinara, parmesan, and 3 tbsp of chopped basil leaves in a skillet and bring to a boil. Reduce the heat to a simmer and cook covered for 20 minutes, stirring frequently.
Place the baguette halved on a baking sheet. Spread 1/3 of the meat sauce mixture onto the bottom half of each baguette section. Sprinkle cheese over the top of the meat and bake for 5 minutes. Top with fresh chopped basil leaves and the top of the baguette.
*This recipe actually calls for Italian sausage generally and has you mix the meat, about 1/3 of the sauce, the parmesan cheese and 2 tbsp of chopped basil together and form meatballs. Then add the meatballs to the rest of the marinara sauce and 2 more tbsp of chopped basil in the skillet and follow the directions, turning the meatballs. My meatballs fell apart. Also calls for parsley. I hate parsley.
